For a door opener, this really depends on the application - is this person in a facility?  Is it for a commercial or residential door?  My go to door opener is www.opensesamedoor.com

For call button - if this is a residential facility that has a call system, there are options to incorporate into the existing system.  If this is a residential application, then a switch adapted call chime would be a recommendation.  http://www.rjcooper.com/call-chime/index.html  An appropriate switch would need to be selected to suit their needs.

For voice activated dialer - more depends - land line or cell phone?  If the client has CP, is his voice clear?  A switch adapted option might be a better fit.
