Hi Ben,
Tobii communicator has a page set and synthesizer that uses Pinyin to type and speak in Mandarin.  The person needs to know Pinyin to use it.  Pinyin is a method that uses a roman letter keyboard which then predicts characters phonetically.   

You could also check out the Mandarin 2-stroke, low-tech system that I posted on my Pinterest site.  Nurses visiting from Taiwan told me they use it to communicate with non-verbal, literate, Mandarin speaking patient with ALS.   I had a video link of someone using it at one point but it stopped working.   Text to Speech in Asian Languages

I am working with someone not computer oriented, who speaks (spoke) Mandarin.  Husband also speaks little English.  Pointing becoming difficult, might be able to use a head mounted laser pointer.  Any suggestions for communication boards so she can communicate beyond pictures?  Using pictures for simple communications, but hoping to enable more versatile communication between husband and wife.
