I don't think you can answer by voice with "Hey Siri" but am open to hearing otherwise.

There are a few plantronics headsets that allow for voice activated answering via  BT earpiece.  For example:

"manage your calls without pressing buttons - just say "Answer" or "Ignore"."

But nothing that I know lets you hang up by voice.  And you still need to push a button or the earpiece to activate Siri if device is not plugged in allowing for "Hey SIri".  Also, probably bears testing if the earpiece is connected to make sure Hey Siri still works.
