There's a new free iPad TTS app named Verbally.  It has a keyboard with word prediction, core vocabulary and a phrase page. All of this talk about jailbreaking iPads is making me consider it.  I have the Camera adapter for my iPad and once jailbroken would love to plug a headtracker into it and trial headtracking with a switch.
